Salsa Mac

Ingredients
- 2 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 cups milk
- 1 cup salsa
- 1/2 tsp salt
- 2 1/4 cup (14 oz.) Velveeta; cut into 1/2 inch cubes
- 3 cups uncooked macaroni noodles
- 1 lb. ground beef
Directions
- Preheat oven to 350 degrees F
- Grease 9×13 inch casserole dish.
- Fill medium saucepan with water, and bring to a boil. Cook macaroni noodles according to package directions, and lay out in casserole dish. set aside.
- cook ground beef in a medium sized skillet until brown. remove from skillet and set aside.
- Add butter to skillet. Once melted, slowly add flour while mixing together with butter. cook for 1 minute, stirring constantly with a rubber spatula, then gradually add milk while continuing to mix.
- Add salsa and salt. bring to a boil, stirring constantly until mixture thickens
- Remove from heat. Add in Velveeta. stir until melted. If needed, place mixture back on low heat, stirring constantly until Velveeta melts.
- Add ground beef to mixture.
- Pour mixture evenly over macaroni noodles in casserole dish.
- Bake in oven for 15 minutes. Allow 5 minutes to cool, then serve.
Notes
Max developed this dish to use impossible meat instead of ground beef, so it can be made vegetarian with no further substitutions.
