Zucchini Brownies

Ingredients
- 1 1/2 cup granulated sugar
- 2 tsp vanilla
- 2 cups flour
- 1 tsp salt
- 1/2 c cocoa powder
- 1/2 cup canola oil
- 1 egg
- 1/3 cup milk
- 1 1/2 tsp baking soda
- 2 cups zucchini, grated
- 1/2 cup of walnuts or pecans, chopped (optional)
- 1/2 cup semi-sweet chocolate chunks (optional)
Directions
- Preheat oven to 350°
- beat sugar, canola oil, vanilla, egg, and milk in a large mixing bowl.
- add flour and zucchini in batches, alternating between the two.
- mix in nuts if desired
- Pour mixture into a 17×3 greased cakepan.
- Bake in oven for 25-30 minutes
Notes
Zucchini in a brownie might sound strange at first, but the zucchini adds a great deal of moisture and texture to a brownie. The way you grate the zucchini will change the texture a bit, so grate using the fine side of the grater if you want a smoother texture. Grate coarsely if you want a more noticeable flavor and texture in the finished brownie.
Optionally, you can add walnuts and pecans for a nutty finished product, or kick the chocolate up a notch by adding in some chocolate chunks or chocolate chips!
