Smoked Gouda Beer Cheese Soup

Ingredients
- 2 tbsp. flour
- 2 tbsp salted butter
- 1 stock celery, minced
- 1 carrot, minced
- 1 shallot, minced
- 5 cloves garlic, minced
- 1/4 stick butter
- 1/4 cup chicken base
- 2 cups water
- 2.5 cups heavy cream
- 1/8 tsp cayenne
- 1 tsp white pepper
- 1 tsp salt
- 1/4 cup white wine
- 1 lb shredded gouda cheese
- 1.5 cups blonde ale
Directions
- Make a blond roux with the 1 oz. flour and 1 oz. salted butter. set the roux aside
- Sauté chopped celery, carrots, onions, and garlic in a kettle with 2 oz. butter in a medium saucepan
- Add water, chicken base, beer, and heavy cream. Mix thoroughly, and add all spices (cayenne, white pepper, and white wine.
- Simmer slowly for 10 minutes
- Add the roux to the mixture, and whisk well
- Add cheese in multiple increments, melting and blending it on low heat until smooth.
