Shay’s Refried Black Beans

Ingredients
- 1 1/2 medium yellow onion, diced
- 1 1/2 fresh jalapeños, diced
- 3 cloves garlic, diced
- 1 can black beans
- 2 tsp cumin
- 1 Tbsp. tequila
- lime juice (to taste)
- salt (to taste)
- pepper (to taste)
- queso fresco or cotija cheese (optional)
Directions
- Heat up a medium sized pan, and add butter.
- Once butter melts, And add jalapeños, garlic, and onion. cook until onion and pepper is soft.
- Add cumin, and cook for additional minute
- Dump beans along with bean water into the pan. bring to a boil, then reduce to a medium simmer until half of the water is reduced.
- use a hand blender to blend the mixture. Simmer on low until it is no longer watery, monitoring to ensure it doesn’t burn
- Add lime juice, salt, and pepper to taste
- serve topped with crumbled queso fresco or cotija cheese, if desired.
Notes
This is a great dish to use as a side for multiple dishes, but also works great as an ingredient in tacos, burritos, or our mango-black bean empanadas!
