Quinoa with Apricots and Pistachios

Ingredients
- 1 cup quinoa, rinsed
- 2 Tbsp butter
- 1 small onion, chopped
- ¾ tsp salt
- 1 ¾ cup water
- 1 Tbsp lemon juice
- ½ tsp coriander
- ¼ tsp cumin
- 1/8 tsp pepper
- ½ cup apricot, chopped
- ½ cup gouda, shredded
- ½ cup pistachios
Directions
- Rinse the quinoa, spread on a cookie sheet, and let dry for 15 min. Cook in a saucepan for 5-7 min until fragrant and popping. Remove from pan.
- Add butter, onion, salt, lemon juice and spices to pan, and cook for 5-7 min, until onion is softened and browned.
- Add water, quinoa, and apricot – simmer 18-20 min, or until water is evaporated. Check consistency of quinoa. If still too hard, add more water and simmer longer.
- Add Gouda in intervals while stirring, to melt it evenly.
- Add pistachios, mix in, and serve.
Notes
This recipe pairs especially well as a side with pork chops. You can optionally add chopped bacon in at the end alongside the pistachios for another layer of flavor. Our Bourbon Candied Bacon gives it an entirely new, savory/spicy/sweet character!
