Oatmeal Raisin Cookies

Ingredients
- 1 cup seedless raisins
- 1 cup water
- ¾ cup shortening
- 1 ½ cups sugar
- 2 eggs
- 1 tsp. Vanilla
- 2 ½ cups flour, sifted
- ½ tsp. Baking power
- 1 tsp. Soda
- 1 tsp. Salt
- 1 tsp. Cinnamon
- ½ tsp cloves
- 2 cups rolled oats
- ½ cup chopped nuts
Directions
- Preheat oven to 400°
- Simmer raisins and water in saucepan over low heat until raisins are plump, 20- 30 min.
- Drain raisin liquid into measuring cup. add water to make ½ cup.
- Mix shortening, sugar, eggs and vanilla by hand. Stir in raisin liquid. Blend flour, baking powder, soda, salt, and spices; stir into mix by hand. Add rolled oats, nuts and raisins, mix by hand. Scoop and drop rounded teaspoonfuls of mix 2” apart into ungreased baking sheet. Bake 8-10 min.
Notes
Ensure you mix ingredients by hand. Simmering the raisins is the secret to soft raisins with this recipe.
