Lemon Pasta With Asparagus

Ingredients
- 1 Lb Spaghetti noodles
- 1 Lb asparagus, trimmed and cut in 2 inch pieces
- 1 small onion, chopped
- 4 gloves garlic
- 1/2 cup heavy cream
- 1 cup white wine or veggie broth
- Juice from 1/2 of a lemon.
- Zest from 1 lemon
- 1 tsp kosher salt
- 1/2 cup fresh parmesan cheese, grated
- 1/2 cup white pepper
- 1/2 cup fresh parsley, chopped
- 1/2 tsp red pepper flakes
Directions
- cook pasta in boiling water according to package directions. Reserve 1/2 cup of pasta water
- heat oil over med heat. Cook asperagus until crispy. Set aside
- Heat oil again. Saute Onions and garlic until softened. Add cream, wine (or broth), lemon juice, and lemon zest.
- Bring to boil and let simmer for 5 mins.
- Add salt, pepper, and parmesan cheese. reduce heat and mix until well combined
- remove from heat. mix in pasta, asparagus, and parsley. Add pasta water as needed for desired consistency
Notes
This recipe works well with a variety of vegetables- some suggestions include sugar snap peas, bell peppers, yellow squash, broccoli, white or baby portobello mushrooms, water chestnuts, and bok-choy. We use something different every time.
This is a vegetarian dish, but if you’re craving meat, you can easily stir-fry in some chicken breast, and use chicken broth in place of veggie broth.
