Egg noodle dough

Ingredients
- 3 egg yolks
- 1 whole egg
- 3 Tbsp cold water
- 1 tsp salt
- 2 cups flour
Directions
- Mix eggs, water, and salt together until smooth.
- Stir in 1.5 cup of flour until smooth. Add additional flour by one spoonful at a time, until dough becomes a ball, but is slightly sticky.
- Dump dough out onto a foured surface. use well floured hands to kneed the dough until it is no longer sticky; about 3-5 minutes
- Allow dough to rest for 10 minutes
- roll the pasta out using a pasta maker. First, feed the dough through the roller. and roll to desired thickness. Fold dough into thirds, to make it shorter, sprinkle flour on the dough, and feed it through the roller. Repeat at least 5 times. Turn the machine to a thinner setting, for a thinner dough.
- replace roller of the pasta maker with the noodle cutting attachment. Feed dough through one more time, and use a knife to cut noodles to desired length.
- If cooking immediately, add to a pot of boiling water, and cook until tender to the bite, or about 2-3 minutes. Drain and serve.
Notes
We use a noodle maker to actually roll out the noodles ourselves, but if you do not have a noodle maker, you can follow the alternative directions:
After step 4, roll out the dough into a lightly floured counter until less than 1/4″ thick, or otherwise desired thickness. Use a sharp knife or pizza cutter to cut noodles into long strips, of desired thickness and length.
