Carrot Cake

Ingredients
For cake mix
- 3 cups raw grated carrots
- 2 cups sugar
- 4 eggs
- 1 ¼ c cooking oil
- 1 cup chopped pecans or walnuts
- 2 cups and 2 Tbsp flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla
for Icing:
- ½ stick margarine, softened (not butter)
- 1 Tbs vanilla
- 12 oz cream cheese
- 3 cups powdered sugar
Directions
- Preheat oven to 350°
- Add all ingredients for cake mix into a large mixing bowl, and mix together well.
- Pour into a greased cakepan and bake for 40-50 min or until a toothpick comes out clean.
- Meanwhile, add all ingredients for icing together in a medium sized mixing bowl, and mix together well.
- When cake is finished cooking, allow it to cool for 10 minutes, then apply icing while cake is still warm, but not hot.
Notes
For a healthier option, you can substitute the cooking oil with applesauce.
