Notes
We make our Nashville hot spice mix HOT, and a little bit goes a long way in most of our dishes. If you want a milder heat, dial the Cayenne pepper back to 3-4 Tbsp.
Depending on your chili powder, this ingredient might seem a little redundant or even unconventional (chili powder commonly contains paprika, garlic powder, onion powder, and cayenne pepper, among other things). We use our own chili powder mix for this, and like the additional herbal and slightly smoky flavor it imparts, not to mention the cumin. You can opt to leave out the chili powder, and just substitute in an additional half tsp of garlic powder, onion powder, smoked paprika, and mustard powder, as well as 1 Tbsp. cayenne pepper for a more traditional mix.
