Sourdough Pancakes

Ingredients
- Sourdough starter (If you don’t have any starter, use the following in a pinch)
- 2 cups of flour
- 2 cups of warm water
- 1 package of dry yeast (2 1/4 tsp)
- 1 tsp salt
- 1 Tbsp. sugar
- 1 tsp baking soda
- 1 egg
- 2 Tbsp. melted shortening
Directions
- If you have no sourdough starter, make the starter the night before as follows
- Combine ingredients for the starter (flour, warm water, dry yeast package) in a large bowl, and mix well. This mixture will rise, so ensure the bowl is large enough to accommodate. Place in a warm location overnight.
- Add salt, sugar, baking soda, and eggs to the mixture, and mix well.
- Bake on a hot griddle
Notes
This recipe assumes you have a sourdough starter, but if you don’t, don’t worry! The pancakes turn out amazingly well using the overnight starter described above.
